Okay, after all the candy of Halloween I'm feeling the need to post something healthy. And it doesn't get much healthier than a salad, right? The bonus to this salad is that it taste awesome, you won't want to stop eating it. The flavors of the dressing & the apples together are amazing. The crunchiness of the toasted walnuts add such a great contrasting texture to the spinach. You have to try this simple, healthy, yummy salad. It's perfect for Fall. Here's the scoop...
Ingredients
9 cups baby spinach
2 Fugi apples diced
1 cup walnuts chopped & toasted
Crumbled feta cheese for topping
Dressing
1/2 cup olive oil
1/4 cup balsamic vinegar
4 teaspoons soy sauce
4 teaspoons maple syrup
2 teaspoons whole flax seeds (or sesame seeds)
In a bowl whisk all the dressing ingredients together until well incorporated. In a large bowl gently toss spinach, apples, walnuts & dressing. Sprinkle feta cheese on top. Serve immediately.
*you could also add pears & dried cranberries to this salad. To toast walnuts simply chop & spread them out on an ungreased cookie sheet. Place in a 350 degree oven for 5-10 minutes or until brown & crunchy.
